Tybee Island Blue Cheese Bread Pudding
¼ cup butter
1 loaf day old Italian bread, preferably not sliced
4 cups crumbled blue cheese
3 cups half n half or whipping cream
Salt and pepper to taste
Preheat oven to 375
Liberally butter sides and bottom of glass 13 x 9 baking dish.
Rip bread into small quarter size pieces and place in baking dish evenly.
Evenly sprinkle blue cheese crumbles all over bread.
In large bowl, whisk the eggs, cream, salt and pepper.
Pour over bread covering completely; let stand for 20 minutes until bread is softened.
Bake, uncovered at 375 for 40 minutes or until a knife inserted near the center comes out clean. Let
stand 10 minutes before serving.
Serve warm with succotash sautéed in remaining butter or corn and sliced red and green peppers.
